St Patrick’s Day is finally here so there’s only one thing to do… make cocktails!

Paddy’s Day has become one of the biggest worldwide parties of the year and if you’re celebrating this year, you’ll no doubt need some drinks for the occasion. If you’re not a fan of beer, maybe you’d prefer one of these festive St Patrick’s Day cocktails instead.

We know it’s going to be a quieter St Paddy’s this year but you can still make the most of it in your own home and create some delicious cocktails with your fellow leprechauns:

Irish Mint Mojito

An Irish twist on a classic favourite.

  • 60ml Irish Whisky
  • 2tbp of sugar
  • 2tbp mint leaves
  • 4 lime wedges
  • Handful of crushed ice
  • Splash of tonic water
  • Extra lime to garnish

Put an Irish spin on a classic cocktail and start with the syrup for this sweet mojito. Combine the sugar and water over a medium heat in a saucepan. Bring the mixture to a boil and let it simmer until it thickens, before removing and cooling completely. Meanwhile, prep your mint leaves, lime wedges and muddle this with your cold mixture using a spoon. Add the whisky and ice and shake for 30 seconds. Finally pour, add a splash of tonic water and garnish with lime, and there you have it, a delicious Irish Mint Mojito!
