How is rum made?
Generally, rum is made by the fermentation of molasses, with slower-working yeasts creating the more flavoursome rums while faster-working yeasts are favoured for white rums such as Bacardi. The rum is then distilled, aged and blended, with the addition of caramel in darker rums in order to achieve the deep colour required. Recently, it’s also becoming a trend to give whiskies a period of second maturation in dark rum casks. This exciting trend means there are many new and delicious rums washing up on the shore in order to supply blossoming whisky distilleries with the rum-soaked casks they’ll need later on to fulfil their big whisky business plans. If the enticing waters of the rum industry is something you’re looking to explore, look no further than the Captain. With flavours of vanilla, brown sugar, dried fruit and warming spices, this sweet, syrupy rum is a great place to start if you fancy setting sail on a rum voyage. Mixed with Coca Cola or ginger beer, this rum is refreshing and sugary, with the underlying subtle warmth of the spices. The Captain is at the helm of the rum industry and there’s a very good reason why he got the job: this spiced rum is truly golden. Named after Norman ‘Sailor Jerry’ Collins, a successful tattooist and sailor, whose tattoos inspire the artwork on the bottle, Sailor Jerry’s is a smooth, rich rum with dominant flavours of vanilla and almond, complemented by the suggestion of cinnamon and cassia. Alongside Captain Morgan’s, Sailor Jerry’s is a great traditional, golden spiced rum. Morgan’s offers a slightly sweeter taste, with Sailor Jerry’s recently altering their recipe to lessen the strength of the vanilla and lime flavours. The rum overall, however, is still syrupy with hints of brown sugar and caramel, complemented by a deep woodiness.

The Kraken Black Spiced Rum is one of the tastiest rums on the market. This is a Caribbean dark spiced rum as opposed to the previous golden rums, meaning it offers more of the deep, sweet, molasses flavour enlivened by a mix of eleven different spices, including cinnamon, ginger and cloves. Kraken is less obviously sugary than some of its competitors but offers a depth of flavour that is very sophisticated and is a firm favourite amongst seasoned rum drinkers. It’s no myth, the Kraken is a serious player on the rum market.

This golden spirit is everything you’d expect from a spiced rum, executed perfectly. The vanilla is far more dominant than in any of the other rums on this list and is paired nicely with the hint of lime which runs through the spirit. Admiral Vernon’s is syrupy goodness balanced with warm spices and toffee. The overall drink is incredibly smooth and despite the name, there is nothing old hat about this creation. There’s nothing better than this to get you in the swashbuckling, buccaneering spirit without having to leave the house or get on a boat.

Hailing from a distillery in the West End of Glasgow, the Wester Spirit Co. Premium Spiced Rum has an incredibly rich, full-bodied flavour. The fermented molasses is pot distilled twice to further develop the flavour and natural spices, citrus zests and ginger are infused into the rum afterwards. The colour of this rum falls somewhere between the dark spiced rum and the golden rums meaning the spices are subtle but identifiable, with the focus on nutmeg, ginger and star anise, and the vanilla doesn’t overpower with sweetness. They’ve not adopted the pirate theme, but that doesn’t steal anything from the quality of this spiced rum.
